Mango Salsa

It is mango time in Myrtle Glen!

We have only one tree, the natural dwarf variety 'Carrie', so the mango harvest is manageable. Enough fruit to eat fresh and share some with friends, make several recipes and freeze the rest. 

Time to make some mango salsa :-)




Ingredients:
  • 2 mango, peeled and diced
  • 1/2 medium sized red onion, diced
  • 1  red bell pepper, diced
  • 1 jalapeno pepper, seeded and finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons cilantro, chopped
  • juice of 1 lime, or more to taste
  • salt, pepper to taste

Directions:
  • Combine all ingredients, season to taste with lime juice, salt, and pepper. 
Serve with tortilla chips. 
This salsa also tastes great as a side with grilled fish, shrimp or chicken, or use as topping on a tropically inspired salad.

  1. Very nice! How awesome to have your own mango tree. My father-in-law and my daughter love mangoes, so they always enjoy and split a crate or two of mangoes during mango season!
